I want your Dutch Oven recipies. What are they?

Just Kidding! (maybe) I don't have a Dutch Oven, but Wade's brother uses one a lot, and has even won cook-offs with his recipes. I'll try to get copies of them for you.

1st Place Baklava for the Dutch Oven

- 24 sheets Fillo (phylo) dough (Thaw in fridge overnight, do not leave on counter)
- 1 cup butter, melted
- 1 1/2 cups finely chopped walnuts
- 2 T sugar
- 1 tsp cinnamon

Lemon Honey Syrup:
- 1 1/2 cups sugar
- 3/4 cup water
- 1/2 tsp lemon juice
- 1 T honey

Prepare honey syrup by combining all ingredients and bringing to a boil. Boil 1 minute. Chill.

Melt butter. Mix walnuts, sugar and cinnamon; set aside. Butter the bottom of a 12-inch dutch oven generously. Lay 1 sheet of Fillo dough in the bottom of the dutch oven. While working with your fillo, keep it covered. (Technique: Butter a sheet of wax paper, place all fillo sheets on it, cover with wax paper and then a damp cloth.) Using a pastry brush, butter the top, beginning at the edges and working towards the center. Repeat this step until you have placed 8 sheets of Fillo dough in the dutch oven, buttering each layer. Sprinkle 1/2 nut mixture evenly over Fillo dough. Place 8 more sheets of Fillo dough on top of nut mixture, buttering between each layer. Sprinkle remaining nut mixture on top layer. Repeat with 8 more sheets of Fillo Dough. Drizzle remaining butter on the top. Fold down excess Fillo dough from around the edge of the dutch oven. Cut into diamond shaped pieces without cutting through the bottom layer of Fillo dough. Place lid on dutch oven. Bake at 350 for 35-40 minutes or until lightly golden (350=8 coals on the bottom and 16 on the top). Remove from heat and pour chilled syrup over the Baklava. Finish cutting through the bottom layer of Fillo. Serve. (To make in a conventional oven, use a 9x13 pan).

Pumpkin Dessert

4 eggs slightly beaten
1 can (29oz) Pumpkin
1 1/2 cup sugar
1 tsp Salt
2 tsp Cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
3 cups evaporated milk
1 yellow cake mix
1 cup chopped nuts
1 cup melted butter

Mix eggs, pumpkin, sugar, salt, cinnamon, ginger, cloves, and milk. Spread into the bottom of a seasoned dutch oven. Spread dry yellow cake mix over the top. Sprinkle with nuts and then pour melted butter over. Bake at 425 for 14 minutes and then reduce heat to 350 for 50 minutes. (425 = 20 coals on top and 12 on bottom. 350 = 14 coals top and 6 bottom).

Candied Apple Dumplings
(Won 3rd place in dutch oven competition)

8 medium apples, peeled, sliced
3/4 cup sugar
2 tsp cinnamon
8 T butter
4 cup flour
1 1/2 tsp salt
1 1/3 cup shortening
1 egg beaten
1 T vinegar
8 T water
2 cups water
1 cup sugar
1/2 cup butter
1/2 cup red hot candies

Pastry:
Place flour and salt in bowl. Cut in shortening. In glass measuring cup (at least 1 1/2 cup), beat egg, add vinegar, and fill with ice cold water to 1 1/2 cup line. Add barely enough vinegar mixture to flour to hold dough together, 6-7 T. Divide into 8 equal pieces. Roll each piece 8 to 9 inches in diameter.

Syrup:
Combine sugar, 1/2 cup butter, water, and red hots. Bring to boil and boil 3 minutes. Place apples on pastry and sprinkle with 1 T. cinnamon sugar mixture and top with 1 T. butter. Fold up pastry around apples and pinch to seal at the top. Pour syrup over the top and bake at 375 for 30 to 40 minutes.

Little Porkies
(Great in Dutch Oven)

3 lbs. pork, cut into small pieces
2 cans cream of mushroom soup
8 oz to 1 lb fresh mushrooms, sliced
2 boxes stuffing mix, prepared or your own favorite

Brown pork in heavy skillet. Stir in mushroom soup and simmer for 40 minutes. Pour in dutch oven. Add sliced mushrooms on top of mixture, layer bread stuffing mix over mushrooms. Bake at 350 for 30 minutes.

Dutch Oven Egg Casserole
(Good for breakfast.)

18 eggs
1/2 tsp baking powder
1 1/2 cups sour cream
1/2 lb ham, chopped
3/4 lb (3 cups) grated cheese
1/2 cup margarine

Beat eggs and baking powder together until lemon yellow. Add sour cream. Add melted margarine, beating into mixture. Beat on medium for 2 minutes. Spray dutch oven with Pam and pour in egg mixture. Bake at 325 for 10 minutes. Add ham and cheese. Bake 50 minutes at 325 or until eggs are solid. (Good with a little extra ham and cheese.)

Mexican Manicotti

1 lb. ground beef
1 can refried beans
1 pkg taco seasoning
14-16 manicotti shells, uncooked
2 bottles green taco sauce

Mix uncooked ground beef with beans and taco seasoning. Stuff mixture into uncooked manicotti shells. Lay stuffed shells into a 12-inch dutch oven. Mix green taco sauce with 2 bottles of water (use the same bottles the sauce came in). Pour sauce over manicotti and bake at 350 for 1 hour. Remove from heat and sprinkle with cheese over top. Replace lid just long enough to melt cheese. Garnish with olives and green onions, if desired. Serve with bowls of sour cream chopped lettuce, chopped tomatoes, guacamole, or anthing else you like on top.
