This year we want to try doing mussels on the grill
Just grill whatever veggies you like and slap them on some toasted bread, rolls, foccacia, etc. Bell peppers, squash, onions (you might want to skewer them), tomatoes, eggplant, zucchini all work well. Slice everything lengthwise so they are thin enough to cook, but wont fall thru the grate. Don't cut them into little pieces. Top with whatever dressing you like--Italian dressing, miracle whip, ranch, whatever.
I almost forgot--our all time favorite grill food is corn on the cob. Just pull back the husks (don't take them all the way off)and remove the silks, pull the husks back up, soak for about 30 mins in water, then put them on the grill until tender, about 10 mins. The husks will get charred, but the corn is oh so yummy. Just pull back the husks and use it for a handle. Flavored butters or seasoning is even yummier. You can buy grilled corn at every festival in NM.
